Green Beans, Lima Beans and Sesame

     So today I made Green Beans and Lima Beans with Sesame. It’s a quick dish which makes it great for busy days.  I don’t  really like using frozen vegetables but Lima beans cook well from frozen and are really hard to find fresh.

Simply dunk both beans in some simmering water for around 8-10 minutes. (We like our beans a little on the crispy side, if you don’t- keep them in there a little longer).

Then in the bottom of a serving bowl put in 2 tsp of rice vinegar and 1/2 tsp of sesame oil.  Add the beans to the bowl and give them a toss to coat them in the dressing. Then sprinkle some toasted sesames on top and you are done. They make a great side to any dinner!

Of course, the real question is what about the family?

Husband ate them.

Son #1 tried them.

Son #2 rejected them. Of course.

So I’m still a mom on a veggie mission.
