Quick Tomatoes and Celery

Monday night and time to try again. This time with Tomatoes and Celery. Add a little olive oil to your pan and heat at medium. To this you could add 1 tsp. of garlic powder( or if you are not trying to win over a 3 year old – use the real thing!)

Then add about 6 stalks of celery cut to  1/2 inch slices. Allow those to cook for around 4 minutes before adding one container of cherry tomatoes. I like to halve them but it’s really not necessary.  Season with salt and pepper to taste and about 1 tsp of dried dill.  Continue to cook until the tomatoes are just softened. This takes about 4 minutes.

Just as you serve them add the juice of half a lime.

Husband- ate it and loved it!

Son #1- decided that he likes raw tomatoes better.

Son #2- covered his mouth with his hands.

I think I had better try something from a cookbook next!

Also, a neighbour of mine asked why I didn’t just coat the vegetables in cheese. I didn’t want to sound like a food snob so I didn’t say much but really I think that’s cheating. Besides, what if zombies take over the city and we have to flee to the countryside and live off the land for a while. I guarantee that there won’t be any cheese but we might find a tomato!
