Although I like to think of us as an organized household, there are times when we drop the ball and really have no clue what we are going to eat. This is why I always stock up on canned beans. In a pinch, you can make amazing stuff with them.
One of our favorites is Roasted Chickpeas. By themselves, they make a nice salad topper or snack, but add a little avocado and you’ve got a meal.
Start by preheating the oven to 450 F. I like to use a glass baking dish but you could just as easily use a rimmed baking sheet. Drain one 19 oz. can of chickpeas and spill them out onto your baking dish (try to make sure the chickpeas are in a single layer and that they are dry. Doing this will help crisp your chickpeas.) Add 2 tbsp. of olive oil and coat the peas. Then sprinkle the coated chick peas with 1 tbsp. of cumin, 1 tsp. of paprika, and 1/2 tsp. of sea salt. Give your dish a bit of a shake to coat all the chickpeas and then stick it in the oven for 10 minutes. Take it out and shake it again. Then it’s back in the oven for another 5-8 minutes. You want your chickpeas to be crispy.
Next, mash up three small avocados. To this add the juice of 1 lime and salt and pepper to taste. Spread this avocado mash on a wrap -we like corn tortilla wraps. Then press some chickpeas down into the spread (in order to keep them from rolling away.) You could top this with lettuce, tomatoes, and cilantro.

Son #1- Ate it but didn’t love it.
Son #2- Tried it but didn’t love it. Things are improving though, this is the second dish he has tried 🙂
Oh, and don’t worry every meal also has a dish that I know Son #1 and #2 will devour. The boys aren’t going hungry!
On another note:
Son # 2 turns four in a month and when reciting the alphabet, he still gets mixed up at ‘QRST.’ This is not so alarming, but I realized that, though he still has trouble with the alphabet, he can identify almost 20 corporate logos with no trouble. Here’s a small sample of what he knows:
McDonald’s, Starbucks, Lego, MegaBlocks, Toys ‘R’ Us, FedEx, StarWars, Wii, Nintendo, Google, Interac and I could go on and on and on.
