Watermelon Lemonade

We are having a heatwave so I do declare,  “It’s too hot to cook!” You’ll also have to forgive the fact that this drink contains no vegetables but it’s yummy!

Simply take a 1/4 of a watermelon, cube it and remove the seeds. Then pulse it in a blender with a 3-4 ice cubes until it becomes a slush-like puree. Fill a glass about 1/2 full with the watermelon puree and then top off your glass with regular lemonade. If you like you can garnish your drink with a few mint leaves.

Depending on the size of your family, you may have a lot of the puree left. If so, simply pour that into an empty ice cube tray and pop it in the freezer. You’ll have cold watermelon ice cubes to add to any drink the next day.

Who drank it?

Husband- ” This is good, but could use a little rum.”

Son #1-   Drank it and liked it.

Son #2- He didn’t like the texture at first but, after diluting the puree with more lemonade, he drank it.
