Snow Peas with Water Chestnuts

 With everyone back at school and work, it’s back to making dinner in about 40 minutes. This recipe fits nicely into just such a timeline.

 To start remove the tips and the strings along the side of about 2 cups or 2 handfuls of snow peas. In a large skillet heat 2 tbsp. safflower oil, and saute 1 clove of garlic, minced. Then add your snow peas, 1/2 cup of water chestnuts and 1 tbsp. tamari  to the skillet. Saute at medium high for 1 minute. Reduce the heat to medium and add 1/4 cup of vegetable broth. Cover and simmer for an additional 3 minutes.  Sprinkle some sesame seeds on top for a little added crunch.

Who ate it?

Husband- Of course.

Son #1- No, but he ate very little, even his lunch came back home untouched. The poor guy is in shock at what a full day of school actually means. This morning he asked how long it was until he could retire. Too funny.

Son #2- He didn’t eat it either, but he did request popcorn cauliflower. AMAZING!!!
