Simply take 1 can of heart of palm, drain the liquid and cut the palm hearts into bite-sized slices. Then pit and cube 1 medium sized avocado.
Put both the heart of palm and the avocado in your serving bowl and then squeeze the juice of 1 lime over it. Then add 1 tsp. dried cilantro and a pinch of salt. Toss this all (very gently) and you are done!
It’s so simple but surprisingly delicious, plus there is no oil!

Husband- Loved it.
Son #1- Didn’t even want to try it.
Son #2- He tried it, which was surprising as when I was making it he sniffed the air and exclaimed, “What is that gross smell?”
When I didn’t respond, he exclaimed, “I bet it’s a recipe!”
