Potato Waffles

This idea comes from a  Huffington Post food slide. Their slide looked much better than my final result but was a little skimpy on the details. This was probably because much of this recipe depends on your waffle maker. In any case, here’s what I did.

Shred 4 medium-sized yellow potatoes (this made two large waffles) and preheat your waffle iron. Once it is preheated spray on some canola oil, and spread about half of the shredded potato onto the waffle iron.

Cook for about 15 minutes. I was neurotic and kept checking it every 3 minutes. This was not necessary but greasing the iron is very important, if you are not generous, you won’t get your waffle out.

Who ate it?

Husband-He ate it – thought it tasted better after it rested for a few minutes.

Son #1- Tried it but didn’t love it.

Son #2- He tried it 🙂

Around our house:

One week into Jk and Son #2 is already doling out advice at his school. Apparently, on Friday his teacher found him holding court with a group of boys. He told this group of full-day JKers that if they’d like to go only half a day, as he does, then all they have to do is scream at thier parents!

This combined with the fact that he calls his coat hook a hooker is probably going to get us on some sort of  ‘special’ school list.
