Son #1 really wants to lose a tooth- any tooth. According to him, he’s the only kid in grade one who has yet to lose even one tooth! Unfortunately for Son #1 none of his teeth are even loose, but in an effort to be supportive and perhaps speed up the process, I made a really crunchy salad. It has apples, celery and candied walnuts all on a bed of kale.
To begin you need to prepare the walnuts. Preheat the oven to 350°F and then in a saucepan combine 1/4 cup of sugar, 1/4 tsp. of cayenne pepper, 1/4 tsp. of nutmeg, 2 tsp. of water, 1 tsp. of honey and 1/4 tsp of salt. Heat this at medium low until the sugar dissolves. Let it cool a little and then add 1.5 cups of walnuts. Stir the walnuts around to coat them with the sugar mixture and then spread them on a lined baking sheet. Bake for around 10 minutes, but check them at around 6 minutes to make sure they aren’t burning.
When making salads I like to make the dressing right in the salad bowl and then add the other ingredients on top. So in a medium sized salad bowl combine 1 tbsp. of red wine vinegar, 1 tsp. of Dijon mustard and 1.5 tbsp. of olive oil.
Next, add 1 small bunch of kale. Wash and tear up the leaves ( don’t use the stalk or stems as they are very difficult to chew). Then chop 2 large sticks of celery and 1 small apple into bite-sized slices and add this to the salad bowl.
Toss everything together to coat with the dressing at the bottom of the bowl and then top with your candied walnuts.

Son #1- Yes, but only the celery and the apples.
Son #2 – Are you kidding me? Of course not.
Son #1 still has all his teeth and he comes from a long line of late bloomers, so those things are probably going to stay in there for another year. I just hope they come out before the going rate for a lost tooth reaches $5.00!!
